Mishti Doi - Fermented Sweet Dahi

Mishti Doi also known as fermented sweet dahi, is a classic Bengali cuisine and very popular dessert in all states of the country. The name Mishti Doi is the mixture of two Bengali word ‘Mishti’ means ‘sweet’ and ‘Doi’ means ‘dahi’. In Hindi language it can be called as meetha dahi.

Technique of Preparation

What makes Mishti Doi different from simple dahi or meetha dahi is the technique of preparation?
Mishti Doi takes more time to prepare as compared to yogurt. Preparation time of Mishti Doi depends on the local region temperature because yogurt takes more time to set when the weather is cold. Generally, Yogurt takes at least 9-12 hours to set and this affects the making time of Mishti Doi.
The process to make this sweet is very easy and hassle free.

Steps to make Mishti Doi :

  • Place kadhai or pan on the low or low-medium heat, add milk until it reduces to ¼ its quantity then takes it off the heat and set aside for 8 -9 minutes.
  • Make the Syrup: Place another pan on flame, add sugar/jaggery with 2-3 spoons of water and allow the sugar to melt. Remove the pan from heat when the color of the melted sugar changes from brown to caramel. Be careful not to let the sugar burn.
  • Add the light golden bubbly mixture into reduced milk. Stir well until it dissolves completely in the milk. Add cardamom for the flavor or fragrance. To make Mishti Doi the combination of yogurt and sugar/ Jaggery should be in a balanced proportion.
  • Setting the Mishti Doi : Add Yogurt and mix well. Pour the mixture into small earthen pots or kullads or glass bowls. Cover it and keep the Doi in a slightly warm place for few hours or overnight.
  • Store the doi in the refrigerator, garnish with nuts or dry fruits and serve with your meal or as a dessert.
